One roaster and a long table
Corvo started in 2016 as a back-room roastery with a single table out front. We still roast every Tuesday, still buy every coffee direct, and still save the best seat for whoever comes in first.

Since 2016
How we got here
Ten years, two cafés and one rule: buy the best coffee we can find, from people we know, and pay them properly for it.
2016
Mercer Street opens
A 5 kg roaster in the back room and a single long table. We roasted twice a week and sold out most Saturdays.
2019
First trip to Guji
We cupped at the Hambela washing station and bought our first lot direct. Every coffee since has been bought the same way.
2022
Harbour Row opens
A terrace on the water, open until 11pm, for people who want good coffee after dark.
2025
Twelve origins, all direct
We now roast 600 kg a week and publish what we pay for every lot.

Pay farmers properly
We pay at least double the market price for every lot and publish the numbers each year.

Roast for flavour
Small batches, stopped early and rested for a week. Nothing sits on a shelf for months.
